Meal Two Reduced-Fat General Tso's Chicken

It was healthy, but even better, it was delicious....     Reduced-Fat General Tso's Chicken  came out perfect. Tigger even requested our chef recreate the Garlic Green Beans from Empire Chinese to add to a perfect meal.  Yummo!

Meal Three: Chicken Thighs with Pancetta, White Beans, and Rosemary

  Very tasty winter fare, Chicken Thighs with Pancetta, White Beans and Rosemary made a good meal.  Israeli couscous and broccoli completed the plate. Fun this week: seeing how this tester recipe, Chicken Scarpaiello , was finally published - Chicken Scarpaiello.   Our version had more hot cherry peppers and more parsley,  Maybe we contributed to the final outcome! 

Meal Two: Beef Enchilada Casserole

  A frigid week seemed like a good reason for warm Mexican food.    Beef Enchilada Casserole was the right choice.  The crowd always seems to appreciate this Homemade Red Enchilada Sauce , which really is simple and tastes great.  We had beans and salad and finished off the meal with homemade brownies from the chef.  Yum. The biggest excitment seemed to be regarding the arrival of squeezable sour cream.  It was a game changer.  

Meal One: Southern-Style Smothered Chicken

  A yummy start to the new year.... Smothered Chicken .   We added rice, sauteed spinach and rolls.  It was complete with fresh baked cookies!  Our guest from California enjoyed a fine meal on a cold Maine night.

Another year of good eats ahead.  Welcome 2016.

Meal Two: Herb Stuffed Pork Chops

We think this was been on the menu before, but it was just as delicious this time. Herb Stuffed Pork Chops and Spinach Orzo plus a salad made for a great meal. "Snow-maggedon"  gave Piglet the urge to bake, so fresh cookies were provided to finish us off in style.

Meal One: Unfried Chicken

January always feels like the time to eat healthy.... even tho cold and dark makes creamy and buttery seem necessary! Un- fried Chicken , Garlic Mashed Cauliflowe r and Sauteed Spinach was our inaugural meal.  We used boneless chicken thighs and regular panko and it all tasted great. This was also the debut of beautiful new placemats from Momma Anne and lovely napkins from my beloved Giggles in Indiana!

Meal Three: Maque Choux

To celebrate the birthday boy, we had Cajun cuisine....  Maque Choux and Bacon Topped Cornbread.... YUM YUM YUM

Meal One: Macaroni & Cheese Soup

Hearty start to the year.... Macaroni & Cheese Soup with Buffalo Chicken Fries ( Cuisine at Home ).  A side of sauteed spinach to balance it out.  YUM!

Meal Two: Mustard-Onion Pork Cutlets

We enjoyed Mustard-Onion Pork Cutlets with noodles and rolls.  It was a bit of a beige meal and a tad sweeter than Tigger enjoys, but tasty as usual. Rabbit's bar-tending skills had Eeyore trying to focus!

Meal One: Lemon Chicken with Artichokes and Potatoes

Happy New Year!!!  We started off with lighter fare, just to keep those resolutions going... Lemon Chicken with Artichokes and Potatoes was the choice.  It didn't seem quite enough to our Eeyore, who added a crunchy panko crust- Yum!

Meal Three: Low-Fat Chicken Parmesan

Back to good behavior...  Low-Fat Chicken Parmesan before we set off for travels south.  Vacation eating is usually indulgent, so we tried to be good. Substituted panko for bread crumbs and used regular mayo rather than fat free.  Couldn't justify buying a bottle for 6 teaspoons of product!  It was very tasty and crispy.  Added some buttered noodles and a caesar salad. Rabbit provided a lovely meyer's lemonade cocktail and crack cookies!  Yum.

Meal Two: Spaghetti With Bacon Meatballs

Can't make all our meals about resolutions... sometimes after a snowy day, you need true comfort food....  Spaghetti With Bacon Meatballs was the right note! We skipped the croutons on the Ceasar salad to save some calories that got splurged on bread and Eeyore finally got her first Margarita of the year...Thanks Rabbit! Tigger and I have created our own anthem for Saturday morning cleanup time.. Stuck on Food (find your inner Lionel Richie).

Meal One: Reduced-Fat Beef Stroganoff

In the spirit of a healthy new year, we tested out Reduced Fat Beef Stroganoff   ... delish!  It really was a satisfying substitute for the regular preparation.  We had Caesar salad on the side with dressed up frozen peas (added lemon and Parmesan). Missed our bartender... she was helping out the bears!  Eeyore was sad, as she had been promised a Margarita to start the year.
