Meal Fifteen: Pepper-Crusted Pork Tenderloin with Asparagus and Goat Cheese

Yum, great food in an improved kitchen with good friends.  What more could you want on a fall evening?   Pepper-Crusted Pork Tenderloin with Asparagus and Goat Cheese was wonderful and well accompanied by mashed taters, rolls and "magic" cake dessert.  

Meal Eighteen: Chiles Rellenos Casserole

  We have enjoyed  Chiles Rellenos Casserole before, but it sure is tasty! Started out with guacamole and classic Rotel queso dip . We substituted a Mainer for a Canadian, as Piglet was under the weather. :(

Meal Twenty Two: Chicken with Creamy Parmesan Sauce and Artichokes

  Chicken with Creamy Parmesan Sauce and Artichokes  was super tasty and mashed potatoes made it even easier to enjoy more sauce!

Meal Twenty One: Goulash with Bowtie Pasta

Chicken Thigh Goulash with Buttered Bowties was a delicious choice for a fall evening. Sadly, Eeyore had to carry home leftovers to sick Piglet... Get Well Soon!

Meal Twenty: Mexican Empanadas

Mexican Empanadas were our evening delight.  No recipe link, as this is a "tester" recipe from  America's Test Kitchen.  Sign up if you are interested in being a tester too :  ATK Community These were yummy and our feedback was just to add more spice to the beef/cheese filling mixture.  it will be fun to see how this compares to the recipe they eventually publish! No mexi meal is complete with rice, beans and salsa.  We also used some of my cilantro verde sauce  ( recipe ) which is being drizzled on EVERYTHING around here.

Meal Fourteen: Spicy Spaghetti Pie

Spicy Spaghetti Pie   was a crowd pleaser...meat, sauce and cheese baked together. We needed a big pan (9x13), but there were plenty of yummy leftovers.  Even some homemade garlic bread!

Meal Thirteen: Pork Chops & Rice

  Might be one of the last for the year to be enjoyed on the sunporch... Fall is upon us. Pork Chops and Rice was very tasty... rice was super flavorful and  made great leftovers for another dinner! 

Meal Seventeen: Pork Marsala Saute

A hearty fall dish  Pork Marsala Saute   to end September.   Very tasty and even enhanced with panko crust - is there anything that doesn't taste better with panko? Tigger might have found it a bit sweet and Christopher Robin had to pass off the mushrooms to Rabbit, but no one left hungry! Piglet downsized from two bikes to one, but it sounds like a pretty cool trade... makes us count the days until summer again!

Meal Sixteen: Pan Roasted Chicken

A happy ten year anniversary to  Eeyore and Piglet... they are worth 300 cows! It has been a long time since Pity Dinner (and even since we were all together), so we did want to make sure and give our chef a challenge, which she handled with the usual delicious outcome... Pan Roasted Chicken with Cheesy-Herb Mashed Potatoes had a wonderful sauce and tasty chicken.  We added a few chicken thighs for Christopher Robin and Rabbit as dark meat lovers. It was a great night of celebration!

Meal Sixteen: Skillet Meatballs and Noodles in Creamy Herb Sauce

Simple, yet lovely for the start to a rainy weekend... Skillet Meatballs with Creamy Herb Sauce was so straightforward that Eeyore had time to create dessert too (Peanut Butter Cup Brownies!).

Nicknames

September has been full of schedule conflicts and PD has been neglected...time for new nicknames! In honor of the classic lover of food (and hunny) Frizz= Rabbit Cpap= Christopher Robin Dory = Eyeore Squirt = Piglet Bubbles = Tigger Squints=  Pooh

Meal Fifteen: Buffalo-Chicken Macroni and Cheese

This was better than average comfort food!  I had made this myself  in the spring for a saturday night dinner with friends, but we needed Dory's advanced skills to really enjoy  Buffalo Chicken Mac and Cheese . It came out cheesy and bubbly, with some kick from the hot sauce.  The immersion blender stepped in again to ensure a creamy sauce.  YUM!

Meal Fourteen: Chicken Tacos

Back to school time!  What an incredibly nice summer.... it was tough to stay indoors and cook.  Our Labor Day weekend started out great with Easy Chicken Tacos. This was a wonderful recipe that has inspired me to try more poaching chicken breasts rather than roasting in the oven.  I like to cook up a few pieces just to have on hand for creating dinners.  Lots of recipes call for purchasing a rotisserie chicken and shredding the meat for quick meals.  I really like to cook it myself - tastes better, cheaper and probably a bit healthier as I think those store chickens are full of salt.  Dory enhanced the recipe a bit - used the entire can of adobo chilies and the sauce was just great.  Good heat, but not too firey.  There were a few leftovers that made yummy lunches during the week. We started out with guacamole & chips and also had some beans for a side.  A lovely start to the new season of PD!
