Meal Nineteen: Farfalle with Crispy Prosciutto and Peas

A warm meal on an cold December night,  Farfalle with Crispy Prosciutto and Peas   was a tasty dinner and a fine evening.  Happily, Piglet was feeling well enough to supervise our chef and everything was perfect.  Another yummy year in the books!

Meal Eighteen: Crispy Garlic Chicken Cutlets

  Oh wow, this was delish!!!   Crispy Garlic Chicken Cutlets , (used panko instead of regular crumbs) mashed taters and sauteed spinach. What a GREAT meal. 

Meal Seventeen: Mm-possible Cheeseburger Pie

  This was a favorite of Tigger's growing up. His Grandma would make it for him and even gave me copy of the recipe with her added notes (more cheese ... sometimes I leave off the tomatoes...) .    Tigger has been missing his grandpa recently as he refinishes his old drafting table, so a little homage was a good solution.   Its more known as Impossibly Easy Cheeseburger Pie today and some sauteed corn worked right along side. Hooray for childhood treats!

Meal Sixteen: Pasta with Sausage Ragu

  Meat, garlic, tomato sauce... what's not to love???    Pasta with Sausage Ragu was a crowd pleaser and perfectly accompanied by salad and garlic bread.  Chocolate Cream Pie for dessert completed a lovely fall evening.

Meal Fifteen: Pepper-Crusted Pork Tenderloin with Asparagus and Goat Cheese

Yum, great food in an improved kitchen with good friends.  What more could you want on a fall evening?   Pepper-Crusted Pork Tenderloin with Asparagus and Goat Cheese was wonderful and well accompanied by mashed taters, rolls and "magic" cake dessert.  

Meal Fourteen: Chicken Chilaquiles

  It was a toasty night in the kitchen, but delicious meal.   Chicken Chilaquiles was enjoyed by a big gang snuggled onto the porch!   Our Mexican meals always seem to have SO MANY dirty dishes!  Oh well, Christopher Robin worked his magic on cleanup. 

Meal Thirteen: Grilled Chicken Caesar Pasta Salad

  Grilled Chicken Caesar Pasta Salad is a popular repeat.  Seemed like a cool choice for a HOT week but, yikes... it's a warm July in Maine.   Sure was tasty tho!   Substituted chicken thighs and marinated them in this fabulous recipe .  Tigger and I make this marinade frequently and it's great every-time. 

Meal Twelve Grilled Pizza

  Summer doesn't get more fun than Grilled Pizzas!   Everyone gets their range of choices from spinach and ricotta to "sauce, lots and lots of sauce". 

Meal Eleven: Chicken Parmesan Roll-Ups

  Cheesy, saucy goodness... Chicken Parmesan Roll Ups with pasta and salad made us all very happy. we also got an amazing desert of Peanut Butter Mud Pie.... YUMMO!

Meal Ten : One-Pan Halibut with Red Potatoes, Corn, and Andouille

  Really love sheet pan dinners and this seemed another opportunity to enjoy more of the yummy striped bass the boys brought home from NJ.   It was a great replacement for halibut and we even used my "super sized" sheet pan, which is good for expanding the recipe serving from 4 to 6.   Took some shopping to find Old Bay, but a nice start to summer with an at home "clambake"... One Pan Halibut with potatoes, corn and andouille.

Meal Nine: Southwestern Layered Beef Casserole

  Beef, cheese, Mexican flavors... you will always please this crowd and Southwestern Layered Beef Casserole was no exception.   Rounded out with cilantro lime slaw and cornbread (tried the Krusteaz brand Southern Mix), it was another great meal!

Special Episode: Jersey Fresh Catch

  A fun trip to the Garden State and we got to enjoy some fresh caught Striped Bass, courtesy of Tigger and Christopher Robin's mad skillz!   Eeyore found a great recipe for a lovely lemon caper sauce.  Added some orzo with peas and asparagus with Parmesan crust... WOW was this a great Saturday night treat. 

Meal Eight: Tagliatelle with Prosciutto and Peas

Simple but very yummy.  Tagliatelle with Prosciutto and Peas was truly enjoyed.   Hooray...spring is here!

Meal Seven: Chicken Bonne Femme

Chicken Bonne Femme hit the right note for spring weather that can't commit fully to WARM!     It was a tasty combo of chicken and potatoes, rounded out with cornbread . I can't bring myself to make the sweeter version preferred in this part of the world, but this varied  from my usual super simple to appeal to the gang and I was pleased with how it came out      Once again, Piglet proves you can't get better friends ... casual comment of a restaurant menu with bourbon cheesecake and next thing you know, custom made just for us. How lucky are we?!

Meal Six: Crunchy Haddock

  It's fish season!   Delicious version of the fan favorite, Panko Crusted Haddock ... sandwiches for some, just fillets for others.   The required accomplishment of Chile Cilantro Aioli completes the meal. 

Meal Five: Pasta Bar

  Time for custom creations and LOTS of dirty dishes!   Pasta Bar returns... our standard quick red sauce , pesto, egg noodles and assorted toppings - sausage, beans, cheeses, onions.   Traders Joe's fresh pastas- spinach/ricotta tortellini and artichoke ravioli were big hits.

Meal Four: Bacon Wrapped Meatloaf

  Yummy comfort food on a snowy day - Bacon Wrapped Meatloaf , Mashed Potatoes and Green Beans (add bacon!)   Get well Owl!     We also hosted a Kahlua tasting flight where Piglet correctly identified the store bought, other home brew and his own creation with just a tiny sip of each.  He's wicked smart. 

Meal Three: Chicken Thighs with Pancetta, White Beans, and Rosemary

  Very tasty winter fare, Chicken Thighs with Pancetta, White Beans and Rosemary made a good meal.  Israeli couscous and broccoli completed the plate. Fun this week: seeing how this tester recipe, Chicken Scarpaiello , was finally published - Chicken Scarpaiello.   Our version had more hot cherry peppers and more parsley,  Maybe we contributed to the final outcome! 

Meal Two: Beef Enchilada Casserole

  A frigid week seemed like a good reason for warm Mexican food.    Beef Enchilada Casserole was the right choice.  The crowd always seems to appreciate this Homemade Red Enchilada Sauce , which really is simple and tastes great.  We had beans and salad and finished off the meal with homemade brownies from the chef.  Yum. The biggest excitment seemed to be regarding the arrival of squeezable sour cream.  It was a game changer.  

Meal One: Southern-Style Smothered Chicken

  A yummy start to the new year.... Smothered Chicken .   We added rice, sauteed spinach and rolls.  It was complete with fresh baked cookies!  Our guest from California enjoyed a fine meal on a cold Maine night.

Another year of good eats ahead.  Welcome 2016.
