Meal Two: Beef Enchilada Casserole


A frigid week seemed like a good reason for warm Mexican food. 
 Beef Enchilada Casserole was the right choice.  The crowd always seems to appreciate this Homemade Red Enchilada Sauce, which really is simple and tastes great. 

We had beans and salad and finished off the meal with homemade brownies from the chef.  Yum.

The biggest excitment seemed to be regarding the arrival of squeezable sour cream.  It was a game changer.

Meal Ten: Skillet Macaroni with Zesty Meat Sauce

This was good easy fare for a rainy Summer evening.   Skillet Macaroni with Zesty Meat Sauce gave us the chance to use our basil (which recovered from some type of animal attack earlier this season) and new pan.  It was a generous portion with enough leftovers for everyone. We didn't want to be too simple for our skilled chef, so we added a bakery component.  Garlic Cheese Biscuits from Paula Deen were perfect!  These yummy little treats did NOT have any leftovers. Even our birthday boy Squirt noticed right when he walked in... "those look like the Bisquick biscuits my mom used to make", to which we responded "they are!"

Meal Twenty-Three: Chicken Shepherd's Pie

  Our 2015 Finale was a tasty twist on Shepherd's Pie ... chicken!  It was lots of chopping and shredding, but delish!  Some great dinners rolls and desserts rounded out the meal.  What a great year!
