Meal Twenty Eight: Baked Spaghetti

Found it on Pinterest, of course! Baked Spaghetti was a big hit and fine finale to 2014!  We made our own quick tomato sauce with the Cooks Illustrated recipe we use for pasta bar. It was another wonderful year!

Meal Twenty Seven: Philly Cheesesteak

These yummy sandwiches took some time but were well worth it!  Philly Cheesesteaks made from sirloin tips pounded thin, with onions and peppers.  Salads got delayed, so we enjoyed another day.  The season of eating is underway!  

Meal Twenty Six: Prosciutto-Wrapped Pork Tenderloin

We were celebrating and the Bday Girl requested a previous success... Pork Tenderloin .  Eeyore made special Sauteed Spinach and Twice Baked Potatoes. What a great day! Happy Happy Love to our favorite Rabbit!

It was the best version of a great meal!  Grilled Patty Melts and Jo Jo Potatoes - lots of work for our chef team and we really enjoyed!

Meal Twenty Four: No Boil Mac & Cheese with Bacon

 This was another delish Fall Treat - individual Mac & Cheese .  We used some of Piglet's family dishes... perfect ramekin sizes! It was modified (improved!) with Pork Belly instead of bacon (thanks Trader Joes) and some crunchy panko crumbs on top!  Salad and bread to round out the meal. Dessert was Maple Syrup Pie and crème fraîche.

Meal Twenty Two: Chicken with Creamy Parmesan Sauce and Artichokes

  Chicken with Creamy Parmesan Sauce and Artichokes  was super tasty and mashed potatoes made it even easier to enjoy more sauce!

Meal Twenty One: Goulash with Bowtie Pasta

Chicken Thigh Goulash with Buttered Bowties was a delicious choice for a fall evening. Sadly, Eeyore had to carry home leftovers to sick Piglet... Get Well Soon!

Meal Twenty: Mexican Empanadas

Mexican Empanadas were our evening delight.  No recipe link, as this is a "tester" recipe from  America's Test Kitchen.  Sign up if you are interested in being a tester too :  ATK Community These were yummy and our feedback was just to add more spice to the beef/cheese filling mixture.  it will be fun to see how this compares to the recipe they eventually publish! No mexi meal is complete with rice, beans and salsa.  We also used some of my cilantro verde sauce  ( recipe ) which is being drizzled on EVERYTHING around here.

Meal Nineteen: Buttermilk Baked Chicken

  Buttermilk Baked Chicken .... This was probably not a favorite, but still good.  I think perhaps the chicken should have brined longer and been in smaller pieces..... ah well, it was nice to be together!

Meal Eighteen: Iowa Loose Meat Sandwiches

Tasty summer fare.... Iowa Loose Meat Sandwiches .   They seemed so simple. we gave Eeyore the challenge of salt & vinegar potatoes .  It was a great combination.

Meal Seventeen: Crunchy Haddock

How much we love   Panko Crusted haddock and our beloved guest, Papa Bear, from the ATL!

Meal Sixteen: Thai Pork

It was a grand summer evening with happy travelers and yummy food.     Thai Pork with Cucumber Salad preceded the Birthday Brownie for desert!

Meal Fifteen: Sauteed Lemon Chicken Strips

Sauteed Lemon Chicken Strips and Orzo with Peas & Mint ... it was great meal before a long break.  Summer is lots of fun, sun, family and fish, so PD will be sidelined for a bit!

Meal Eleven: Patty Melts

Spring on the porch... Patty Melts , fries, quick cole slaw.  it was all delicious.

Meal Ten: Fish Redux

Final (forced) Fish Friday... we just stuck to a beloved favorite... Panko Crusted Haddock , Crunchy Slaw and Fries.  Excellent as usual... Eeyore takes care of us once again.

Meal Nine: Tacos

you could make a chicken taco, a beef taco, a burrito bowl... the possibilities are endless!   as long as there is ENOUGH cheese and plenty of salsa, it all goes well. it was still daylight when we sat down.... Yippee Spring!

Hearty start to the year.... Macaroni & Cheese Soup with Buffalo Chicken Fries ( Cuisine at Home ).  A side of sauteed spinach to balance it out.  YUM!
