Meal Twenty: Mexican Empanadas

Mexican Empanadas were our evening delight.  No recipe link, as this is a "tester" recipe from  America's Test Kitchen.  Sign up if you are interested in being a tester too :  ATK Community

These were yummy and our feedback was just to add more spice to the beef/cheese filling mixture.  it will be fun to see how this compares to the recipe they eventually publish!

No mexi meal is complete with rice, beans and salsa.  We also used some of my cilantro verde sauce  ( recipe ) which is being drizzled on EVERYTHING around here.

This meal had a few doubters at the start, but it was a big success.  Pork Chops with Tomato Gravy served over Cheese Grits ... southern goodness from a Yankee chef! The king kutter provided perfectly shredded cheese- as usual.

Meal Seventeen: Mm-possible Cheeseburger Pie

  This was a favorite of Tigger's growing up. His Grandma would make it for him and even gave me copy of the recipe with her added notes (more cheese ... sometimes I leave off the tomatoes...) .    Tigger has been missing his grandpa recently as he refinishes his old drafting table, so a little homage was a good solution.   Its more known as Impossibly Easy Cheeseburger Pie today and some sauteed corn worked right along side. Hooray for childhood treats!
