Meal One: Unfried Chicken

January always feels like the time to eat healthy.... even tho cold and dark makes creamy and buttery seem necessary!

Un- fried Chicken, Garlic Mashed Cauliflower and Sauteed Spinach was our inaugural meal.  We used boneless chicken thighs and regular panko and it all tasted great.

This was also the debut of beautiful new placemats from Momma Anne and lovely napkins from my beloved Giggles in Indiana!

Meal Five: Matzo-Pizza Lasagna

Meal Seven : Pork Chops with Tomato Gravy

This meal had a few doubters at the start, but it was a big success.  Pork Chops with Tomato Gravy served over Cheese Grits ... southern goodness from a Yankee chef! The king kutter provided perfectly shredded cheese- as usual.

Meal Ten: Skillet Macaroni with Zesty Meat Sauce

This was good easy fare for a rainy Summer evening.   Skillet Macaroni with Zesty Meat Sauce gave us the chance to use our basil (which recovered from some type of animal attack earlier this season) and new pan.  It was a generous portion with enough leftovers for everyone. We didn't want to be too simple for our skilled chef, so we added a bakery component.  Garlic Cheese Biscuits from Paula Deen were perfect!  These yummy little treats did NOT have any leftovers. Even our birthday boy Squirt noticed right when he walked in... "those look like the Bisquick biscuits my mom used to make", to which we responded "they are!"
