Meal Three: Low-Fat Chicken Parmesan

Back to good behavior...  Low-Fat Chicken Parmesan before we set off for travels south.  Vacation eating is usually indulgent, so we tried to be good.

Substituted panko for bread crumbs and used regular mayo rather than fat free.  Couldn't justify buying a bottle for 6 teaspoons of product!  It was very tasty and crispy.  Added some buttered noodles and a caesar salad.

Rabbit provided a lovely meyer's lemonade cocktail and crack cookies!  Yum.

Meal Five: Matzo-Pizza Lasagna

Meal Seven : Pork Chops with Tomato Gravy

This meal had a few doubters at the start, but it was a big success.  Pork Chops with Tomato Gravy served over Cheese Grits ... southern goodness from a Yankee chef! The king kutter provided perfectly shredded cheese- as usual.

Meal Ten: Skillet Macaroni with Zesty Meat Sauce

This was good easy fare for a rainy Summer evening.   Skillet Macaroni with Zesty Meat Sauce gave us the chance to use our basil (which recovered from some type of animal attack earlier this season) and new pan.  It was a generous portion with enough leftovers for everyone. We didn't want to be too simple for our skilled chef, so we added a bakery component.  Garlic Cheese Biscuits from Paula Deen were perfect!  These yummy little treats did NOT have any leftovers. Even our birthday boy Squirt noticed right when he walked in... "those look like the Bisquick biscuits my mom used to make", to which we responded "they are!"
