Meal Five: Fajitas

Mexican meals just lend themselves so well to different proteins... it is perfect for a variety of eaters!   We enjoyed creating our perfect fajitas on handmade tortillas from Dory!  WOW - they were great.

She also supplied some delish guacamole that we basically devoured before dinner.  I marinated the steak overnight in this marinade and tossed the chicken for a few hours as well.

We even had sopaipillas with the tortilla dough.  Fresh fried goodness!


Bubbles missed out, as he had a serious case of March Madness and had to be treated downtown with beer and chicken wings.   He is expected to make a full recovery.

This meal had a few doubters at the start, but it was a big success.  Pork Chops with Tomato Gravy served over Cheese Grits ... southern goodness from a Yankee chef! The king kutter provided perfectly shredded cheese- as usual.

Pasta Bar gives plenty of yummy options our different eaters. There was even a special Birthday cupcake for my little guy... Banana with Peanut Butter Frosting homemade by T!

Meal Seventeen: Mm-possible Cheeseburger Pie

  This was a favorite of Tigger's growing up. His Grandma would make it for him and even gave me copy of the recipe with her added notes (more cheese ... sometimes I leave off the tomatoes...) .    Tigger has been missing his grandpa recently as he refinishes his old drafting table, so a little homage was a good solution.   Its more known as Impossibly Easy Cheeseburger Pie today and some sauteed corn worked right along side. Hooray for childhood treats!
