Meal Twelve: Buffalo Chicken Rolls

  Better Homes & Gardens called these "Buffalo Chicken Rolls", but they were re-named Buffalo Chicken Calazones around here.  They came out really yummy.   After Eyore cooked the chicken, she mixed it with celery, carrots, Frank's Hot Sauce and Buffalo sauce.  The pizza dough crust held the meaty goodness with blue cheese crumbles on the top.   Waffle fries for some, Sweet Potato Tater Tots for others.

Meal Eleven: Frito Chili Pie

Frito Chili Pie It started out rainy and chilly, so a warmer dinner was in order.  The day did get nice later and we could grill the corn.  YUM.  we skipped the bag presentation and ate them from the bowls. Eeyore knew the key to good assembly was Fritos on the bottom, a layer of cheese.... THEN the chili (and another dusting of cheese!).  She also provided individual blueberry crumbles from her own harvesting adventure.  Nice.

Meal Ten: Macaroni & Cheese Casserole

Tropical Storm Andrea made it a rainy Friday, so home cooking was in order...   Macaroni & Cheese Casserole      ... creamy cheese with crunchy topping and some grilled sausage was just perfect. Since Tigger discovered Bacon Cheddar Scones , he looks for any opportunity to add them to a meal.  Eeyore obliged...  YUM!

Meal Nine: Chicken Chimichangas

  Chicken Chimichangas ... One Minute Salsa ... Chunky Guacamole It was a delicious Mexican Fiesta for our only May PD.    

Meal Eight: Chicken Cordon Bleu

A fine spring meal... Chicken Cordon Bleu   and Orzo Pilaf.  It was even customized for the non-Swiss cheese eaters in our midst with some pepper jack instead.  Yum!

Meal Seven: Grilled Patty Melts

A repeat and return to MEAT.... Grilled Patty Melts and Jo Jo Potatoes.   Diner fare is popular with this crowd! Sadly, Rabbit was battling strep throat and was missed, but these were delish.  Eeyore  is the master of all challenges presented!

Meal Six: Fish Cakes

Final Fish Friday.... we tried out a new recipe.. Fish Cakes.   I think we can expect a repeat appearance of this crunchy goodness!  Beautiful pieces of cod combined with potatoes and seasoning.  Panko crust... of course. Bubbles recalls having many a meal of Gorton's Codfish Cakes, from the yellow can!  Always accompanied by VegAll salad... it was important to keep a can in the fridge, so it was cold when you mixed it up. This recipe is from Dinner: A Love Story .... sadly,  it doesn't seem to be posted online but the book is a good read if you have a chance to peruse.  The dipping sauce was lime cilantro, also yummy!
